Pineapple Cake Filling
Pair this easy, refreshing pineapple filling with a coconut cake for a pina colada cake or vanilla cake.

EASY PINEAPPLE CAKE FILLING
Ingredients
Makes 2 cups
1 20oz can of Dole crushed pineapple
1/2 cup of granulated sugar
1/8 tsp salt
1 tbsp cornstarch
1 tbsp water
Directions
Whisk the cornstarch and water in a small bowl to create a slurry.
Add the crushed pineapples, sugar, salt, and cornstarch slurry in a small saucepan. Bring to a boil, then reduce to med-low heat. Let it simmer until it has thickened (approx. 3 - 5 mins). Stir occasionally.
Remove from heat, and let it cool completely before using.
TIPS:
You may purchase chunks, tidbits, or slices if you can't find crushed pineapple. Then, process the pineapple in a food processor before cooking.
Adjust the sugar amount for the level of sweetness desired.
